Summers Have arrived in the dessert.........
The first thing that comes to my mind is to increase intake of liquids. Now a days there are lots of options available in the market. Cold drinks, juices , health drinks to name the few.
But for me nothing is perfect than glass of Chaas (India), Buttermilk (English) & Laban (mid-eastern) for summers.
I remember during summers, lunch was never complete without chaas . Ammi used to prepare chaas with dash of cumin & salt. Though she worked at that time. But there was a always glass of laban on the table along with the lunch. And I have kept my ammi's tradition here also.
Do you know the advantages of buttermilk??
Buttermilk is lower in fat & calories than regular milk as all the fat has already been removed from it to make butter.It is rich in protein, calcium & other bone strengthening vitamin.It is also easily digestible than milk.
The foremost benefit is it reduces body heat & keeps you cool.Therefore must be consumed in large quantities in summers.
It is also considered to be one of the best known remedy in terms of weight loss. So if you wanna lose weight start consuming in more quantities. Have it in afternoon as a substitute for tea.
Buttermilk is so beneficial that many docs advise patients to consume more buttermilk instead of milk as it contains less fat, calories & skim milk.
And the best part is that one can consume buttermilk anytime – as a drink, which is refreshing and healthy.
Buttermilk when blended with different spices get different names. It is known as Mattha in Gujarat, Burhani in Maharashtra & Andra pradesh. In northern part of India it is called Lassi.
Burhani
500 ml Buttermilk
1/2 cup curd
1 small green chilly
1 pod garlic
1/2 tsp cumin powder
1tbsp salt
Blender to grind
Method:
- Grind together curd, green chilly,garlic, cumin powder & salt to form a paste
- Mix with grounded paste with buttermilk
- Serve with Biryani, Pulav.
Mattha:
500 ml buttermilk
1 tsp mustard seeds (rai)
1 clove garlic
1 tbsp salt
Muslin cloth or any other cotton white cloth
Mortar & pestle
- Crush mustard seed, garlic in mortar & pestle
- Now place this mixture on the muslin cloth like poti or a packet
- Pour the butter milk in a deep vessel.Add in salt
- Take this packet of crushed mixture and rotate it in butter milk 4 times*
- Extract all the juices by squeezing the packet.
- Can be served with Pilao, Biryani.
1 glass of buttermilk
3 pinches of cumin powder
salt to taste
Mix all the above. Can be served with Korma,Biryani, Pulao, vegetables curries.
Lassi
1 glass of curd
2 tbsp sugar
pinch of salt
crushed almonds (optional)
Blend together curd, sugar & salt. Pour in a glass & garnish with crushed almonds.
